Why is it tested?
Because the spores arrive naturally with the flour and baking does not destroy them; the risk has to be measured at the flour stage.
What does rope spoilage look like?
A peer-reviewed review describes it as sticky and stringy degradation of the crumb, slime formation, discoloration, and an odour reminiscent of rotting fruit. At an advanced stage, “the bread crumb can be almost liquefied and forms long, silky, web-like strands when pulled apart”.
It should not be confused with mould: mould appears outside, on the surface; ropiness starts inside the loaf and may not be visible from outside.
Why is baking not enough?
According to the same review, contamination of flour with these Bacillus species is unavoidable: they are part of the natural endophytic microbiota of wheat and form heat-stable endospores that are not inactivated during processing, baking or storage.
The reason is simple: during baking the core temperature of the bread stabilises slightly below 100 °C. That kills vegetative cells, but the endospores survive the baking procedure in the middle of the crumb.
The species reported to cause ropiness include Bacillus amyloliquefaciens, B. subtilis, B. licheniformis, the B. cereus group, B. pumilus and others.
Under what conditions does it appear?
The review gives three conditions together: temperatures above 25 °C in combination with a water activity of 0.95 or above and a pH above 5. When all three coincide, the spores germinate and spoilage begins.
In practice this is the classic picture of bread packaged and stored in warm weather. The control points follow: rapid cooling after baking, storage temperature and the acidity of the dough.
Is it only a spoilage problem?
No. The review notes that rope-forming bacteria may be hazardous: the B. cereus group causes foodborne illness, and species such as B. licheniformis and B. subtilis produce toxins and have been implicated in foodborne outbreaks.
Rope spore counting therefore concerns food safety as well as shelf life. Done at the flour and dough stage it is preventive; done after the loaf has already gone ropy it is only a diagnosis.
